Passing time.




We have now been "in the window" for referral for one week now. It is really very humorous when the telephone rings here at the Darling home. When ever the phone rings unexpectedly I think "this could be the call", but alas it has not yet been. Tonight I received a call and the person on the phone sounded just like our caseworker from our adoption agency (Gladney) . The really funny part was that it was actually another adoption agency calling to see if we would like to make a donation to that agency this year.
We have been keeping ourselves busy this time of year. As we mentioned in some of our previous posts we have had a very bountiful crop from our garden this year. This time is one of our favorites because of some of the great dishes that get prepared around here. We thought we would share one of the more unique dishes, zucchini pie. It is a dessert, wonderful served cold.

Zucchini Pie
Recipe

2 cups Cooked and drained zucchini, not peeled (I slice it into about 1 inch thick slices)
1 cup sugar (I use less, about 1/2 cup)
1 egg
2 Tbsp. flour
1 cup evaporated milk
1 1/2 Tbsp butter
1 tsp vanilla
dash of salt

Place all ingredients into the blender. Place blender on high and liquify. Pour into unbaked pie crust. Sprinkle with cinnamon and nutmeg. Bake at 425 for 10 minutes, reduce to 300 for 20 minutes or until set. Chill.

Pat in the Pan Pie Crust (super fast)
1 1/2 cup flour
2 Tbsp sugar
1 tsp salt
1/2 cup vegetable oil
2 Tbsp milk

Mix dry ingredients together. Mix oil and milk together. Pour liquid into the dry ingredients and mix with fork. Pat into pie pan.



Everything grows bountifully here at Rainbow Acres....


Our two kittens have had a blast playing in the peach tree. It is so full of fruit that the limbs are weeping to the ground. This is making an excellent play gym for the kittens (Gussy and Gracie). It is a hoot watching them run and jump through the tree.
We continue to thank God for the blessings that we have had this year and continue to rest in his perfect timing to see who it is that he has waiting for us, our daughter in Ethiopia.

Ahhh!! It must be so exciting to hear the phone ring. :) Hope that referral comes soon so we can all hear about your sweet girl. Otherwise I guess it will be a couple months of jumping everytime the phone rings.
